Therapeutic Pesto

Herbs are powerful chelators, and when blended with extra virgin olive oil they will release their polyphenols into the oil, enabling these natural substances to travel to the gut to encourage detoxification. Keep the oil and herb mix in a jar at room temperature for a couple of days, after which you can keep them in the fridge. Simply add 2-4 teaspoons daily (or more) to salads, or foods as garnish instead of during cooking - this minimises the chance of heat destroying the helpful compounds.

Ingredients

Particularly beneficial herbs include coriander (seeds and leaves), basil, parsley, oregano, chives, sage and garlic. You can use any combination you like, adding sea salt, chillies or other seasonings if you prefer.


Method

  1. Add a large handful of fresh herbs to a food processor and blitz to form a paste

  2. Add 120ml extra virgin olive oil to the blender, blend until you have a runny pesto consistency

  3. Keep the oil and herb mix in a jar at room temperature for a couple of days, after which you can keep them in the fridge
