Sweet Potato, Za'atar & Marinated Feta

Ingredients

  • 2 sweet potatoes

  • 200g feta

  • 1 lime, zested

  • 2 spring onions

  • 1 chilli

  • 1 tbsp za'atar

  • 1 bunch coriander

  • Extra virgin olive oil


Method

  1. Bake sweet potatoes in a 200 degree oven until soft through

  2. Meanwhile, slice up the spring onion and chilli, and roughly chop your coriander

  3. Toss the feta in a generous glug of olive oil, the za'atar, half of the coriander, the lime zest and some seasoning

  4. Roughly chop the sweet potato when cooked and toss thoroughly with the remaining ingredients

  5. Drizzle with more olive oil, the juice from the lime, and serve
