Garlic Beans with Sage and Olive Oil

Ingredients

  • Fresh borlotti beans, or 1 jar of Bold Bean co’s white beans

  • 1 bulb garlic

  • Handful of sage leaves (12)

  • 4 plum tomatoes

  • 200ml extra virgin olive oil

  • dash of cream or creme fraiche

Method

1) Combine the beans, tomatoes, garlic, sage and the olive oil in a pan. Add cold water to cover and season generously with salt.

2) Bring to a boil, reduce the heat and simmer partially covered until tender (20 minutes for cooked jarred beans, and 35-45 for fresh beans). Add water as needed to keep the beans submerged, but allow the liquid to reduce a little to intensify the flavour.

3) When the beans are cooked and the liquid has infused, allow the beans to cool in the cooking liquid. Add a dollop of cream or creme fraiche and serve on dark rye bread or alongside chicken or fish.
